- 1 tablespoon finely crushed lavender buds
- 1/2 cup sugar
- 1/4 cup butter or margarine
- 1 egg
- 1 cup flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon finely chopped mint
- 1 teaspoon lemon zest
Preheat your oven to 375 degrees.
Cream the sugar with the butter or margarine.
Add the lavender buds and egg to the butter mixture. Mix well.
Sift together the remaining dry ingredients. Mix the dry ingredients and the butter mixture well.
Fold in the mint and lemon zest.
Drop dough by the teaspoon onto an ungreased cookie sheet. Bake for approximately 10 minutes. Cooking times might vary slightly so watch your lavender cookies to make sure they don’t over-brown.
